A touch of vanilla, as well as a generous amount of chocolate chips and cocoa powder, gives this strawberry brownie beautiful hints of flavor. While it's baking in the oven, you can enjoy those melted chocolate aromas and I just know your mouth will begin to water!

Main Ingredients

The ingredients used to make brownies with strawberries laid out on a table.

Chocolate and strawberries are the main flavors in this dessert, so let's take a closer look at those and find out what else goes into the recipe:

  • Strawberries: For a sweet, fruity touch. I would strongly recommend using fresh strawberries in brownies rather than frozen or canned ones. They not only taste better, but they hold their shape during cooking and do not turn into mush. Fortunately, strawberries are available all year so you can use either local or imported, as you prefer.
  • Cocoa powder: Gives that rich chocolate taste. Use unsweetened cocoa powder here, not the sweetened kind for making hot chocolate. Although some brownie recipes use only cocoa powder and others use only chocolate, I like to include both for the ultimate depth of flavor and richness.
  • Chocolate chips: To add more depth to the flavor. I like to use both milk chocolate chips and the semisweet kind. If you want to experiment, you could try dark chocolate or even white chocolate in brownies with strawberries.
  • Eggs: To fine-tune the texture. Eggs create the stability and structure the brownie batter requires. They also add moisture and help bring the ingredients together into a silky batter.
  • Baking powder: For rising the brownies. When combined with the other ingredients, baking powder will bring air into the batter, but only enough to make them rise a little and keep that fudgy texture. Adding too much, or including baking soda too, would make the brownies too cakey in texture which isn't what we are aiming for.
  • Sugar: Gives extra sweetness. The chocolate chips and strawberries are already sweet, but not enough to counter the neutral and savory-tasting ingredients. So throw in a cup of regular white sugar, adjusting the amount to better suit your palate if you want.

Instructions Overview

The first thing to do is microwave the butter and sugar together until the butter is melted. Add the eggs, vanilla, salt, and baking powder, and then mix in the flour and baking powder.

Fold in the chocolate chips and spoon the batter into a parchment paper-lined baking tin. Add the strawberries on top of the brownie batter then bake in a preheated oven for about 22 minutes or until a toothpick inserted into the center comes out more or less crumb-free.

Let the brownies cool before cutting and serving.

Common Questions

What cocoa powder is best for brownies?

Use unsweetened cocoa powder for brownies with strawberries. Make sure the package says 100% cocoa powder and not "cacao powder" which is typically sweetened and has added dairy.

How do you store brownies after cooking?

Keep them at room temperature in a sealed container and eat them within 4 days.

What is the secret to making chewy brownies?

Cakey brownies, as well as fudgy brownies like these, are typically only for butter, but if you want a chewier center, consider swapping half the butter for canola oil. You can also swap the white sugar for brown sugar since that speeds up the formation of gluten and yields a chewier center.

Chopnotch Tips

  • Want to try a different type of fruit? I expect cherries would work or even peaches or apricot for a brand new take on fruit brownies.
  • If a toothpick inserted into the middle comes out clean, they are overcooked and will be dry and cakey. If it comes out moist with just a couple of crumbs, they're perfectly done, so check as soon as you spot the edges coming away from the pan.
  • Serve these with whipped cream or vanilla ice cream (and strawberry sauce) for a fancy presentation.
