  • Strawberries: For a sweet, fruity touch. I would strongly recommend using fresh strawberries in brownies rather than frozen or canned ones. They not only taste better, but they hold their shape during cooking and do not turn into mush. Fortunately, strawberries are available all year so you can use either local or imported, as you prefer.
  • Cocoa powder: Gives that rich chocolate taste. Use unsweetened cocoa powder here, not the sweetened kind for making hot chocolate. Although some brownie recipes use only cocoa powder and others use only chocolate, I like to include both for the ultimate depth of flavor and richness.
  • Chocolate chips: To add more depth to the flavor. I like to use both milk chocolate chips and the semisweet kind. If you want to experiment, you could try dark chocolate or even white chocolate in brownies with strawberries.
  • Eggs: To fine-tune the texture. Eggs create the stability and structure the brownie batter requires. They also add moisture and help bring the ingredients together into a silky batter.
  • Baking powder: For rising the brownies. When combined with the other ingredients, baking powder will bring air into the batter, but only enough to make them rise a little and keep that fudgy texture. Adding too much, or including baking soda too, would make the brownies too cakey in texture which isn't what we are aiming for.
  • Sugar: Gives extra sweetness. The chocolate chips and strawberries are already sweet, but not enough to counter the neutral and savory-tasting ingredients. So throw in a cup of regular white sugar, adjusting the amount to better suit your palate if you want.

The first thing to do is microwave the butter and sugar together until the butter is melted. Add the eggs, vanilla, salt, and baking powder, and then mix in the flour and baking powder.

Fold in the chocolate chips and spoon the batter into a parchment paper-lined baking tin. Add the strawberries on top of the brownie batter then bake in a preheated oven for about 22 minutes or until a toothpick inserted into the center comes out more or less crumb-free.

  • ½ cup unsalted butter

Instructions

  • Preheat the oven to 350°F. Line a 9-inch square baking pan with parchment paper. Leave some parchment paper hanging over both ends of the pan for easy removal later. Set aside.
  • Add the butter and sugar to a large microwave-safe bowl. Microwave for 30-second intervals while stirring in-between until the butter has melted completely. Mix in the eggs, baking powder, salt, and vanilla.
  • Mix in the cocoa powder and flour until well combined and smooth. Then fold in the chocolate chips and transfer the batter into the prepared baking pan. Evenly drop the sliced strawberries into the top of the batter.
