Candy crackers are great for all occasions from Halloween to birthday parties or even to wrap in cellophane and give as thoughtful homemade gifts. Bite through the smooth chocolate to get to the crisp cookie inside. Yum!

There is no cooking involved and you can get creative with the recipe, if you want to, using whatever type of chocolate or melting candies you prefer. This simple graham crackers recipe is always popular with the kids, but it’s a hit with adults too!

Tanghulu is another super simple candy recipe that is fun to make at home with the kids, or French calissons if you love homemade hard candies.

Main Ingredients

The ingredients to make chocolate covered graham crackers spread out on a table.

Since you only need 3 ingredients to make these, it’s fair to say all of them are the main ingredients. This is what you’ll need to make these tasty candy cookies:

  • Graham crackers: The star of the show. They are sandy-textured, sweet cookies that work perfectly in this recipe. They’re also great for making cheesecake crusts. If you prefer, you can substitute another type of cookie. Gingerbread cookies would be good in this recipe, or anything crispy. Shortbread is soft and crumbly and would offer a different texture. I haven’t tried using shortbread, but I expect it would be delicious.
  • Semisweet chocolate chips: To add chocolate flavor. Any type will work here. You can also spend a little more on disks or professional melting chocolate. Microwaving it is the quickest method for melting it. Another option is to put it in a glass bowl over a pan of simmering water.
  • White chocolate chips: For a contrasting taste. Feel free to use dark chocolate or even a flavored kind such as mint. I like to drizzle the white chocolate over them, but you can also dip the cookies in there or make other designs. These are your candies so you can have fun making them pretty!

Instructions Overview

You’d expect these to be easy considering there are only 3 ingredients and you’d be right! Cut the graham crackers in half so you end up with 24 squares and melt the semisweet chocolate chips in the microwave.

Now you can dip each graham cracker into the melted chocolate and then let it set on parchment paper.

Meanwhile, melt the white chocolate chips and then you can drizzle this mixture over the cookies with a piping bag or spoon. Let them set then enjoy!

Common Questions

Are graham crackers and honey graham crackers the same?

Can you use the honey version to make chocolate covered graham crackers? Actually, you can use any kind of cookie. The honey or cinnamon versions are slightly different but just as delicious in this recipe. Don't be afraid to switch it up and get creative! You can't go wrong with this recipe.

Do you add oil when melting chocolate?

You don’t have to, but when it is almost completely melted you might want to mix in a little coconut or vegetable oil. This helps make the chocolate smooth, but don’t add too much or else it won’t set properly afterward.

What candy is good for melting?

Ghirardelli baking chips melt really nicely and I love Nestle Toll House morsels for drizzling. You can also get colored candies that look pretty when drizzled over your cookies.

Where do you store chocolate-covered cookies?

You can keep these in an airtight container at room temperature for a week. If your kitchen gets very hot, you can also pop them in the refrigerator so they don’t melt. Although you can freeze them, they often develop white patches when thawed, which won’t affect the taste but doesn’t look so good.

Chopnotch Tips

  • The more fat and cocoa butter in the chocolate, the quicker it melts. This means dark chocolate melts the quickest. Choose one with at least 70% cocoa solids for a rich, gourmet flavor.
  • These can be served just as they are or paired with a scoop of your favorite ice cream. They also go great with an evening espresso.
  • Melting candies are an alternative to chocolate. You can use colored melting candies (in seasonal colors!) for example. Follow the directions on the packaging to melt them. The possibilities are endless!

Instructions

  • In a microwave-safe bowl, melt the semisweet chocolate chips in the microwave at 20-second intervals, stirring in-between each interval until fully melted. Dip the graham cracker halves into the melted chocolate one by one, allowing the excess to drip off it, and then place onto a sheet of parchment paper to set.
  • While the chocolate hardens onto the graham crackers, add the white chocolate chips to a separate microwave-safe bowl and melt it using the same method as before. Once fully melted, drizzle the white chocolate over the crackers using a spoon or a piping bag and allow it to fully harden. Serve and enjoy!
