I love this recipe so much because I love toast crunch cereal. I also love quick and easy recipes too! Rice Krispie treats are all well and good, but sometimes you want to make something a little different.

These cereal and marshmallow treats are ideal for the holidays since the cinnamon flavor is so intense. You will find them sweet, rich, and wonderfully chewy. The kids will adore these and so will you!

You only need 4 different ingredients to make these sticky bars. They really couldn’t be simpler to make. These are the ingredients in this recipe:

  • Cinnamon Toast Crunch cereal: The key ingredient here. You can use your preferred brand of cereal or even go generic. If you love it as much as I do, you’ll already have a box in the pantry! Want to try these bars with a different kind of cereal? Go ahead! Try it with Fruit Loops, Reese’s Puffs, or even Fruity Pebbles!
  • Salted butter: For richness and to hold them together. I’m going to give you a handy tip here, something I recently learned. Use European butter if you can get it. European butter is slightly higher in butterfat and lower in water. The more butterfat in the bars, the richer the flavor will be!
  • Mini marshmallows: A sweet, contrasting flavor. I like Kraft marshmallows. They have a nice vanilla flavor and melt well. Store-brand marshmallows are another possibility, but bear in mind they are often stickier which makes them harder to blend with the other ingredients. If that’s all you have, you can use them, but just add a little extra cereal so the mixture isn’t too sticky.
  • Chocolate chips: For a tasty drizzle. Melted chocolate drizzled over these bars finishes them off in style. Choose from semisweet, dark, or white chocolate chips, or even use some of each to customize your Cinnamon Toast Crunch bars your way!

Instructions Overview

First of all, melt the butter in a pan on the stove. Once it’s melted you can add the marshmallows. Keep stirring the mixture until the marshmallows are completely melted.

Now stir in the cereal and then spoon the mixture into a parchment paper-lined baking sheet. Press down on top with another sheet of parchment paper to make sure it’s evenly spread out, then discard the parchment paper on top and let the mixture cool and set.

Melt the chocolate chips and then drizzle the melted chocolate over the bars. Allow time for the chocolate drizzle to set and then use a sharp knife to cut individual bars.

Although sugar or honey is often used in homemade bar recipes, this recipe uses marshmallows for the same purpose. You won’t need to add any sugar or honey to this recipe; the bars are already super-sweet!

Adding milk or yogurt to your morning cereal can disguise any softening of the cereal, but making cereal bars is another way to use it up. Cereal doesn’t get the chance to go stale in this house because we all love it, but if yours has gone a little soft, this recipe is a winner.

How long do cereal bars last?

These bars will be fine in an airtight container at room temperature for 2 or 3 days. After that, they tend to get soft. If you want to keep them for longer, store them in the freezer for up to 6 weeks. Wrap each one individually so you only have to thaw as many as you want to eat. Whichever method you prefer, it’s important to use an airtight container, or else they will go soggy.

How to Make

Cinnamon Toast Crunch Bars

Ingredients

For the bars:

  • 3 tablespoons salted butter
  • 10 ounces mini marshmallows
  • 5 cups Cinnamon Toast Crunch cereal

For the chocolate drizzle:

  • ½ cup semisweet chocolate chips

Instructions

To make the bars:

  • Line a 9x13-inch baking pan with parchment paper. Let some extra parchment paper hang over the two ends of the pan for easy removal later.
  • Melt the butter in a pot over medium heat. Once melted, reduce the heat to low and add the marshmallows. Then spray a mixing spoon with nonstick cooking spray and continuously stir until the marshmallows are fully melted.
  • Remove the pot from the heat and add the cereal. Stir well. Once combined, transfer the mixture into the prepared pan. Cover the top with a sheet of parchment paper and gently press down to form an even layer and then discard the sheet of parchment paper and let cool completely.

To make the chocolate drizzle:

  • In a microwave-safe bowl, melt the chocolate chips in the microwave at 20-second intervals, stirring in-between until completely melted. Using a large spoon, drizzle the melted chocolate over the cooled bar and then let sit until the chocolate has hardened and set.
  • Lift the bar as one piece out of the pan and slice it into individual bars using a sharp knife. Serve and enjoy!
