Making them is a breeze since there isn't much more you have to do than combine the ingredients and bake them in the oven. That's it!

There aren't too many different ingredients in these tasty bars. Here are some of the key ones:

  • Chocolate chips: For a rich flavor. I like to use mini chocolate chips in my homemade bars, but you can use the full-size ones if you prefer. Semisweet works or you could try white chocolate chips for a different flavor. Maybe even throw in some of each kind.
  • Cream cheese: Gives the bars a delicious tangy taste and stops them from being overly sweet. Make sure it's at room temperature to begin with, so it's easier to combine the ingredients together.
  • Oreos: For taste and texture. You will need crushed Oreos here, but don't pulverize them. You are looking for very small chunks of Oreos in the finished cookies, not a sand-like texture.
  • Baking powder: To get the texture right. If you omit this ingredient the bars won't rise up and become light. Baking soda isn't the same either and will give them a different taste.
  • Salt: For contrast and to bring out the sweetness. A pinch of salt is used in many dessert recipes because it brings out the sweet taste and adds another dimension to the flavor.

Instructions Overview

First, you will beat the butter and cream cheese together and then mix in the sugar. Now add in a couple of eggs plus an extra egg yolk and some vanilla.

Mix the dry ingredients together in a separate bowl then add this mixture to the cream cheese mixture. Stir in the crushed cookies and chocolate chips and then spread the mixture into a greased baking dish.

Sprinkle some more crumbled Oreos on top then bake for about half an hour or until you notice the edges turning golden brown.

Since there is dairy in these bars, you might be curious about where to store them. I'd suggest you keep them refrigerated so they don't start to melt and they will keep for several days.

What cookie is similar to Oreos?

You can replace the Oreos in this recipe with another kind of cookie if you want to. Gingersnaps, chocolate wafers, graham crackers, or even almond macaroons can be used instead. Another idea is to mix and match a couple of different types of cookies to make this recipe your own.

Can you substitute regular chocolate chips for mini chocolate chips?

Yes, you can, although I prefer the mini ones in these cookies and cream bars since they go further that way and you get more in each bar.

What happens if you use too much baking powder?

Cookies and Cream Bars

These bars are really easy to make. They taste like Oreos with hints of creamy chocolate and tangy cream cheese.

Ingredients

  • ½ cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 1 ½ teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup mini chocolate chips
  • 18 Oreos, crushed

Instructions

  • Preheat the oven to 350°F. Grease a 13x9-inch baking pan. Set aside.
  • Cream the butter and cream cheese together in a large bowl, and then beat the sugar in while occasionally scraping down the sides and bottom of the bowl until it is light and fluffy. Then add 2 eggs plus 1 additional yolk and the vanilla and mix well.
  • Combine the flour, baking powder, and salt in a separate bowl, and then mix it into the cream cheese mixture until it is fully combined. Occasionally scrape down the sides and bottom of the bowl.
  • Stir in the chocolate chips and crushed Oreos and then spread the filling into the prepared baking pan. Now crush 5 to 10 additional Oreos, but not as coarsely, and evenly spread them over the top of the filling.
  • Bake for 30 – 35 minutes until the edges just begin to turn golden brown. Remove from the oven and let cool. Once completely cool, slice into individual bars. Serve and enjoy!
