Making them is a breeze since there isn't much more you have to do than combine the ingredients and bake them in the oven. That's it!

One of these tasty cookie bars goes perfectly with a cup of coffee in the morning. They also make a nice snack with a tall glass of cold milk before bed. Add them to box lunches or nibble on one whenever you are in the mood for a pick-me-up!

If you like Oreo-based desserts, these popular strawberry crunch cupcakes incorporate golden Oreos and my Philadelphia Oreo cheesecake is always a hit!

Main Ingredients

The recipe ingredients to make cookies and cream bars laid out on a table.

There aren't too many different ingredients in these tasty bars. Here are some of the key ones:

  • Chocolate chips: For a rich flavor. I like to use mini chocolate chips in my homemade bars, but you can use the full-size ones if you prefer. Semisweet works or you could try white chocolate chips for a different flavor. Maybe even throw in some of each kind.
  • Cream cheese: Gives the bars a delicious tangy taste and stops them from being overly sweet. Make sure it's at room temperature to begin with, so it's easier to combine the ingredients together.
  • Oreos: For taste and texture. You will need crushed Oreos here, but don't pulverize them. You are looking for very small chunks of Oreos in the finished cookies, not a sand-like texture.
  • Baking powder: To get the texture right. If you omit this ingredient the bars won't rise up and become light. Baking soda isn't the same either and will give them a different taste.
  • Salt: For contrast and to bring out the sweetness. A pinch of salt is used in many dessert recipes because it brings out the sweet taste and adds another dimension to the flavor.

Instructions Overview

First, you will beat the butter and cream cheese together and then mix in the sugar. Now add in a couple of eggs plus an extra egg yolk and some vanilla.

Mix the dry ingredients together in a separate bowl then add this mixture to the cream cheese mixture. Stir in the crushed cookies and chocolate chips and then spread the mixture into a greased baking dish.

Sprinkle some more crumbled Oreos on top then bake for about half an hour or until you notice the edges turning golden brown.

Common Questions

Do I need to refrigerate cream cheese bars?

Since there is dairy in these bars, you might be curious about where to store them. I'd suggest you keep them refrigerated so they don't start to melt and they will keep for several days.

What cookie is similar to Oreos?

You can replace the Oreos in this recipe with another kind of cookie if you want to. Gingersnaps, chocolate wafers, graham crackers, or even almond macaroons can be used instead. Another idea is to mix and match a couple of different types of cookies to make this recipe your own.

Can you substitute regular chocolate chips for mini chocolate chips?

Yes, you can, although I prefer the mini ones in these cookies and cream bars since they go further that way and you get more in each bar.

What happens if you use too much baking powder?

Although the bars will initially rise up more, they will eventually collapse and go flat. Also, using too much baking powder can give them a bitter taste. Half a teaspoon of baking powder is the perfect amount for this recipe.

Chopnotch Tips

  • Don't try to cut the bars until the mixture is completely cool or else you will get ragged cuts rather than a neat and tidy result.
  • Feel free to make any substitutions you'd like. Try white chocolate chips or consider using gingersnaps instead of Oreos for a deliciously different twist on the result. What about adding a handful of chopped mixed nuts?
  • You can use salted butter if that's all you have but if so reduce the additional salt by half.
