  • Matcha powder: For an elegant flavor. Use ceremonial grade for the brightest color and strongest taste. There isn't a real alternative to matcha since it doesn't have the same taste as regular green tea and is finely powdered. Don't use the contents of matcha teabags in this recipe because you risk getting lower quality matcha and your brownies won't taste as good.
  • White chocolate chips: For the perfect amount of sweetness. White chocolate isn't the typical choice in brownie recipes, but if you use milk or dark chocolate you won't see the beautiful green color from the matcha. Also, the sweetness of white chocolate is a nice contrast with the earthy, vegetal tea flavor. Try it! I promise you'll love this eclectic combo!
  • Granulated sugar: For sweetness. This is another ingredient that is light in color to maximize the green shade of these matcha brownies. Just use regular granulated white sugar here. You could swap some of the white sugar for light brown sugar if you want a more molasses-type taste.

Matcha Brownies

Ingredients

  • ¾ cup all-purpose flour, +1 tablespoon
  • 4 tablespoons matcha powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup white chocolate chips
  • 5 ½ tablespoons unsalted butter
  • 2 eggs
  • 1 cup granulated sugar
  • 1 ½ teaspoons vanilla extract

Instructions

  • Preheat the oven to 320°F. Line an 8x8-inch baking pan with parchment paper. Leave some parchment paper hanging over both ends of the pan for easy removal later. Set aside.
  • Combine the flour, matcha powder, baking powder, and salt in a bowl and whisk until evenly combined.
  • Add the white chocolate chips and butter to a microwave-safe bowl. Microwave for 30-second intervals while stirring the mixture in-between until it has melted completely. Now whisk the eggs into the melted chocolate mixture until it turns uniform in color, and then whisk in the sugar and vanilla until thick and smooth.
  • Fold the chocolate mixture into the flour mixture until smooth and lump-free, then transfer the batter into the prepared pan, level the top with a spatula, and bake on the middle rack for 18 minutes.
