Cinnamon Roll Coffee Cake

A wonderful coffee cake recipe that makes for the perfect coffee companion.

  • 1 ½ cup flour
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 ½ cup powdered sugar
  • 2 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 2 tsp vanilla
  • ½ tbsp cinnamon
  • 1 tbsp water
  • ½ stick butter melted
  • ¼ tsp salt


  • Mix egg, milk and vanilla in a bowl. Mix white sugar, salt, flour, baking powder in a separate bowl. Now mix dry and wet ingredients together.
  • Add melted butter to the mixture and whisk until well combined.
  • Preheat the oven to 350 Spray a baking dish or a cake pan with cooking spray, pour batter into it.
  • Mix brown sugar and cinnamon and spread on top of batter. Bake for 30 minutes, let cool completely.
  • Mix powdered sugar and water until it of a syrup consistency. Pour over cake and serve.


  • Mix thoroughly. The difference between a cute, fluffy cake and a flat one is that one is well mixed, and the other isn’t; especially when mixing dry and wet ingredients. 
  • Look for ground Ceylon cinnamon; this is the true cinnamon and tastes different from the common, Chinese (cassia) cinnamon stick. 
  • It’s all about timing. When baking, it’s all about the right times and the proper temperatures. Make sure your oven hits the 350F mark before baking your cake. Stick a knife in the cake after thirty minutes; it should come out clean; this means you cooked the cake through.
