Breakfast Brownies

Kids and grownups alike will love these! They are quick and easy to make and a healthy way to begin the day. They’re also really tasty.

Ingredients

  • 1 cup rolled oats
  • ¼ cup honey
  • ½ cup cocoa powder unsweetened
  • ½ cup peanut butter
  • 2 eggs large
  • 2 bananas medium
  • teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • milk as needed to blend

Instructions

  • Start by preheating the oven to 350°F.
  • Take an 8×8-inch square baking pan and lightly grease it with non-stick cooking spray. Line with parchment paper and set aside.
  • Now add all the ingredients to a blender and blend until well combined and smooth. Add some milk to the mixture if your blender is having trouble with it.
  • After that, pour the batter into the baking pan and bake for 20 minutes. Check the readiness by inserting a toothpick in the center of the brownies. The dough is ready if it comes out clean.
  • Let the brownies cool in the pan for 20 – 30 minutes. Serve with tea or coffee and store in an airtight container.

Notes

  • If you prefer, you can swap the honey for maple syrup or the bananas for applesauce. Either almond or cashew butter or Greek yogurt can be subbed for the peanut butter.
  • It’s important to let them cool completely before cutting, or else they will be difficult to cut cleanly.
  • Put a slice of bread in the container with these brownies and they will stay soft, as the bread absorbs any moisture.
  • Prefer your brownies warm? You can microwave them for 10 to 20 seconds before serving.
