Peach Cobbler for Two

- 3 tablespoons brown sugar
- 2 teaspoons cornstarch
- ¼ cup water
- 1 ½ cups peaches sliced
- 1 tablespoon unsalted butter
- 1 teaspoon lemon juice
For the topping:
- ⅓ cup all-purpose flour
- 2 tablespoons granulated sugar
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- ¼ teaspoon ground cinnamon
- 4 ½ teaspoons unsalted butter melted
- 2 tablespoons milk preferably whole
- ¼ teaspoon orange zest grated
Mix the brown sugar, cornstarch, and water in a small saucepan over medium heat until smooth, and then add the sliced peaches. Bring to a boil and stir for 2 minutes, and then stir in the butter and lemon juice.
Mix the flour, white sugar, baking powder, salt, and ground cinnamon in a bowl until combined. Then stir in the melted butter, milk, and orange zest.
Now transfer the peach mixture into a 2 cup baking dish, pour the topping over it, and then bake uncovered at 400°F for about 25 minutes or until the cobbler is golden brown on top. Enjoy!
