Main Ingredients

I bet you can't wait to make these amazing Oreo cupcakes. These are some of the ingredients you are going to need:
- Oreo cookies: The main flavor. You will need both regular and mini Oreos to make the cupcakes. Feel free to use generic sandwich cookies instead if you prefer, or in fact any kind of cookie you would like to use.
- Boxed chocolate cake mix: For the cupcake batter. Cake mixes are versatile and you can use them for regular cakes, cupcakes, mini cupcakes, cake pops, and more. You can use any brand of chocolate cake you prefer for this recipe or even try something different like a coffee cake.
- Cream cheese: To make the frosting. Use any brand of full-fat cream cheese for the richest, best flavor. This ingredient gives the frosting a delicious tang. Cream cheese is perfect for making buttercream frosting. Make sure it's at room temperature before you start because that makes it easier to mix and it will also blend better with the other ingredients.
- Confectioners' sugar: For sweetness. This ingredient, which is also known as powdered sugar and icing sugar, is a very fine type of sugar. This means it's perfect to use in frosting for the Oreo cupcakes because regular granulated sugar would give a grainy result. Taste the frosting before you pipe it. If you want it sweeter, add a little more confectioners' sugar, mix it in and taste again.
Instructions Overview
After lining a muffin tin with paper liners, add an Oreo to each one then chop the rest of the cookies. Follow the instructions on the packaging to prepare the chocolate cake, adding in the chopped cookies.
Spoon this batter into the paper liners, but don't fill them any more than ¾ full. Bake the cupcakes for as long as it says to on the box. Let the Oreo cupcakes cool on wire racks.
While they are cooling you can prepare the frosting. Pulse half the mini cookies in the food processor to make crumbs. Cream the butter with the vanilla and cream cheese using a hand mixer and then add the confectioner's sugar little by little.
Stir the cookie crumbs into the Oreo buttercream frosting then put it in a piping bag and pipe some onto each cupcake. Decorate each one with a mini Oreo.

If you only have full-size Oreos but still want to include one in the frosting, you can cut them in half instead of using mini ones. Wet a sharp knife with milk or water then hold it across the cookie. Press down using a sawing motion. The cookie should cut cleanly in half.
You can, but you might prefer to freeze the cakes and the frosting separately then thaw and make them after. If you do have leftover Oreo cupcakes which are frosted, you can still freeze them because buttercream frosting is freezer-stable. It's best to freeze them on a baking sheet first and then transfer them into a sealed container or Ziploc freezer bag. This protects the frosting.

Oreo Cupcakes

Ingredients
For the cupcakes:
- 14.3 ounces Oreos, 1 package, divided
- 1 box chocolate cake mix, plus ingredients listed on the box
For the frosting:
- ½ cup butter, room temperature
- 8 ounces cream cheese, room temperature
- 1 teaspoon vanilla extract
- 3 ¾ cups confectioners’ sugar
- 8 ounces mini Oreos, 1 package, for topping
Instructions
To make the cupcakes:
- Preheat the oven to 350°F. Line two muffin tins with paper liners. Place one regular-sized Oreo cookie flat in the bottom of each liner. Take half of the remaining Oreos, chop them coarsely, and set them aside.
- Mix the boxed chocolate cake mix according to the instructions listed on the box. Mix the chopped Oreos into the cake mix. Transfer the batter into the cupcake tins filling each liner no more than ¾ full.
- Bake for 15 minutes or according to the instructions listed on the box. Remove the cupcakes from the oven and transfer them to a cooling rack to cool completely.
To make the frosting:
- Meanwhile, take the remaining half of the regular-sized Oreos and pulse them in a food processor until you have fine crumbs.
- In a large mixing bowl, cream together the butter, cream cheese, and vanilla extract. Then blend in the confectioners’ sugar a little at a time until well combined.
